           In 1951 Chef Eddie E. Hughes created the Legendary Louisiana Stuffed Shrimp. The Eddie E. Hughes Foundation was created to aid in individuals facing kidney challenges, promote education by providing scholarship to (2) high school seniors, and foresting economic growth within the community. The establishment of a museum will reserve the significant history of the Louisiana Stuffed Shrimp. Through comprehensive support services, education, and economic opportunities, the foundation is aimed to create a lasting legacy of hope and opportunities. Our goal is to revitalize the economies of our city and state by providing a welcoming environment for members of this community, and visitors of neighboring states to come and enjoy the Shreveport Stuffed Shrimp Festival. This festival is a family-friendly event celebrating the unique style of stuffed shrimp that were created and popularized in Shreveport as well as the cultural and historical significance of this beloved regional specialty.
